CABOT INTRODUCES THE PEOPLE'S CHOICE – PESTO CHEDDAR!


Cabot, Vermont – Cabot Creamery, makers of the World’s Best Cheddar and pioneer in the world of flavored cheeses, has introduced its newest flavored cheddar – Pesto Cheddar. The new product was one of three highlighted in a consumer poll called Flavor Vote 2005 to select which would become the newest in Cabot’s long line of award-winning flavored cheddars. The poll was conducted online at a special section of the Cabot website and Pesto Cheddar was chosen by cheddar connoisseurs across the country.

“Ultimately, it’s the cheddar lovers out there who set the trends,” said Rich Stammer, President and CEO of Cabot Cheese. “So we just decided to ask them what they wanted and the Pesto Cheddar was the clear favorite.” While the consumers couldn't taste before voting, due to logistical challenges, the poll otherwise replicated the information consumers base their buying decisions on at retail: packaging, name, brand, and product appearance.

In creating the “candidates” for Flavor Vote 2005, Cabot’s expert cheese makers proposed three ideas featuring savory ingredients and Cabot’s distinctive Vermont white cheddar cheese:

- Three Mushroom Cheddar with earthy shitake, hearty portabella, and rich porcini mushrooms.
- Pesto Cheddar with classic Italian sweet basil and mellow garlic.
- Caraway Cheddar featuring the nutty flavor of aromatic caraway seeds.

Cabot will unveil the new Pesto Cheddar at this year’s Summer Fancy Food Show in New York City in July. The product is expected to begin appearing in stores by mid-summer.
