Contact Information: “Ultimately, it’s the cheddar lovers out there who set the trends,” said Rich Stammer, President and CEO of Cabot Cheese. “So we just decided to ask them what they wanted and the Pesto Cheddar was the clear favorite.” While the consumers couldn't taste before voting, due to logistical challenges, the poll otherwise replicated the information consumers base their buying decisions on at retail: packaging, name, brand, and product appearance. In creating the “candidates” for Flavor Vote 2005, Cabot’s expert cheese makers proposed three ideas featuring savory ingredients and Cabot’s distinctive Vermont white cheddar cheese: - Three Mushroom Cheddar with earthy shitake, hearty portabella, and rich porcini mushrooms. - Pesto Cheddar with classic Italian sweet basil and mellow garlic. - Caraway Cheddar featuring the nutty flavor of aromatic caraway seeds. Cabot will unveil the new Pesto Cheddar at this year’s Summer Fancy Food Show in New York City in July. The product is expected to begin appearing in stores by mid-summer.
